Creamy Sausage & Mushroom Gnocchi

Servings 4

Ingredients

1 tsp extra virgin olive oil 

400g good-quality gnocchi, cooked as per packet instructions

3 pieces of Italian pork sausages, removed from the casings 

200g Swiss mushrooms, quartered

2 cloves garlic, chopped

100ml white wine 

300ml thickened cream

2 large handfuls of baby spinach 

½ cup freshly grated parmesan plus extra to serve

Salt and pepper, to taste

Method

Heat the extra virgin olive oil in a large pan, then add the sausage meat. Break it up with a wooden spoon into mince-like pieces and cook until golden and caramelised.

Add the mushrooms, then add the garlic, and cook until the mushrooms release their moisture and go golden. Now add the wine and bring to the boil.

Pour in the cream, salt and pepper and simmer gently until thick and glossy. 

Add gnocchi and simmer for 3 minutes. Add spinach and parmesan, and stir through.

Serve with extra parmesan and pepper.
