Capricciosa Jacket Potatoes

Ingredients
4 large potatoes
1 tsp tomato paste
3 sundried tomatoes, finely chopped
30g butter, softened
Pinch of oregano
Handfuls of mozzarella cheese, torn or grated
200g champagne leg ham
4 button mushrooms, sliced
4 jarred and marinated artichoke hearts, chopped
8 Kalamata olives, pitted and sliced
Salt and ground pepper
Method
Preheat the oven to 200°C.
Wrap potatoes in foil and bake for 1 hour or until tender when pierced through the centre with a skewer.
Once cooked, cool the potatoes enough to handle. Turn the oven to the grill element.
Mix together the butter, tomato paste and sundried tomatoes and season with salt and pepper.
Cut a cross ¾ deep into the cooked potatoes, but not all the way through and pinch to expose the flesh. Divide the butter between the potatoes and top with mushrooms, artichokes, olives, and ham. Add the mozzarella cheese and place under the grill, and cook until the cheese has melted.
Top with a little oregano and pepper.
