Cig Kofte

Cook Time 30 minutes plus setting time

Servings 6–8

Ingredients

4 cups fine (dark) bulgur

2 cups hot water

1 tbsp red chilli powder

2 tbsp isot (smoked pepper)

1 tbsp paprika

1 tbsp sumac

1 tbsp cumin powder

1 tbsp black pepper powder

2 tbsp salt

3 garlic cloves, grated

2 medium onions, grated & juice squeezed

2 large tomatoes, grated

1 tbsp tomato paste

1 tbsp capsicum paste

½ cup pomegranate molasses 

Ice cubes


To Serve

Cos lettuce

Pomegranate molasses or lemon juice (optional), to drizzle

Method

In a large bowl, combine bulgur with the spices (chilli, isot, paprika, sumac, cumin, black pepper, and salt) and hot water. Cover and let sit for 10 minutes to soften the bulgur and infuse the spices.

Add the grated tomato, onion, garlic, capsicum and tomato paste. Mix in a stand mixer or by hand for 10 minutes. Add pomegranate molasses and ice, a little at a time, until combined and sticky. 

Shape into small finger-sized pieces and serve with cos lettuce and molasses or lemon juice.
