Philly Cheese Roo Steak Rolls

Ingredients

400g herb and garlic Kangaroo steaks, sliced into strips

2 tbsp olive oil, extra for frying

1 brown onion, sliced

1 green capsicum, sliced

1 tsp dried oregano

4 small soft brioche rolls

Salt and pepper

Splashes of hot sauce


Cheese sauce 

3 slices of American square cheese

100g cheddar cheese, grated

½ cup milk

Method

For the sauce, heat the milk gently in a small saucepan over medium-low heat, then add the cheeses a little at a time, stirring constantly until smooth and creamy.

Heat oil in a pan over high heat. Add the kangaroo strips and flash-fry until caramelised. Remove. Now add another splash of oil, then fry the onions and capsicum. Return the meat to the pan and season with salt, pepper, and oregano.

Toast the rolls, then drizzle a little cheese sauce on the bottom bun, fill with meat and capsicum, top with hot sauce and more cheese sauce, then sandwich together.
