Yellow Curry Roast Vegetables

Ingredients

2 capsicums, any colour, cut into chunks 

1 sweet potato 

1 red onion, quartered

2 carrots, cut into chunks 

¼ butternut pumpkin, cut into chunks 

1 tbsp Thai yellow curry paste 

Olive oil 

Method

Preheat oven to 180°C.

Place the vegetables in a lined baking tray.

Combine the curry paste with olive oil, then drizzle it over the vegetables and mix to combine.

Roast for 45-60 minutes or until the vegetables are tender. Serve.
