Honey, Citrus and Thyme Semifreddo

Cook Time 30 minutes plus overnight freezing

Servings 4-6

Ingredients

35g caster sugar

20g glucose

50g honey, plus extra to serve

110g egg white

300g thickened cream, whipped

Zest of 3 lemons, plus extra to garnish

Zest of 1 orange, plus extra to garnish

Thyme, plus extra to garnish

Salt

Method

Place caster sugar, glucose and honey into a pot and heat to 116°C.

Slowly pour into whisking egg whites.

Whisk until cool, fold in whipped cream.

Fold in zests and thyme and a pinch of salt.

Pour into chilled, lined terrine moulds, freeze overnight or until set.

Drizzle with honey then garnish with lemon zest, orange zest and thyme and serve.
