Whipped Honey and Cardamom Butter

Ingredients

600ml pure cream

1 tbsp honey

Pinch ground cardamom

2 tbsp toasted and salted macadamias, finely chopped

To Serve

Crumpets, toasted, to serve

Method

Pour cream into the bowl of a stand mixer and begin mixing on medium-high speed. The cream will start to thicken into soft whipped cream, then into stiff peaks, then into a grainy texture, which will then split into butter. This takes approximately 8–12 minutes on medium-high speed.

Pour off the buttermilk, which you can save for pancakes or scones. Gather the butter into a rough ball and press and squeeze out as much cloudy water as possible.

Place back into the mixer and mix on low speed until macadamias, honey, and cardamom are incorporated.  

Shape into a log or pile, and generously place on a plate. Spread over freshly toasted crumpets.
