Watermelon Sago Dessert

Ingredients

200g sago dessert

1 x 270ml coconut milk

2 cups chopped watermelon, chilled

Fresh raspberries, to serve

A few sprigs of mint, to garnish

Method

Blend coconut milk with 1½ cups of watermelon until smooth. Fold through sago pearls.

Distribute remaining watermelon pieces between 6 decorative glasses. Pour over the sago and watermelon mixture and garnish with raspberries.

Garnish with mint.
