Mixed Berry Roll-Ups

Cook Time 5 minutes plus 5 hours in oven

Servings about 8-10 long strips

Ingredients

2 cups fresh mixed berries of your choice

¼ cup caster sugar 

1 tbsp lemon juice 

Method

Preheat the oven to 85°C. Line a flat tray with baking paper or a silicone baking mat.

In a food processor, blend ingredients together until smooth. If desired, strain to remove seeds.

Pour the mixture into the tray and use an offset spatula to create a thin, even layer.

Bake for four to five hours, rotating the pan halfway through baking or until the fruit puree is no longer sticky.

Using a greased pizza cutter or kitchen scissors, slice into desired-size strips/pieces.

Wrap in baking paper and store in an airtight container.
