Vanilla Cream Cocktail

Ingredients

1 cup caster sugar

1 vanilla pod, seeds scraped

1 tsp vanilla bean paste

30ml vodka

30ml Irish cream whiskey

30ml thickened cream

Ice

Method

Boil ½ cup of caster sugar with ½ cup water until the sugar has dissolved. Add the vanilla bean paste and cool completely.

Add the vanilla bean seeds into caster sugar and mix together. Rub a little vodka on the rim of the martini glass and dip into the vanilla sugar.

Add 30ml of the sugar syrup to the shaker (or to your liking), along with the vodka, Irish cream whisky, cream and ice. Give it a good shake and serve chilled in the martini glass.
