Smoked Salmon Burrito

Ingredients
1 knob of butter
4 eggs
100ml of thickened cream
1 tbsp chives
2 extra large tortillas
6 slices of smoked salmon
Salt and white pepper
Tabasco or any hot sauce of your choice
Lemon, to serve
Method
Whisk the eggs with the cream and salt and pepper. Add the butter to a pan with a splash of oil and allow to melt then pour in the eggs. Let it set for a few seconds, then bring the sides to the centre and swirl the pan to scramble the eggs. Once just set and fluffy, remove from the heat and add the chives.
Arrange salmon in one layer over each tortilla. Add eggs and roll into a burrito. Lightly toast on each side. Serve with hot sauce and lemon.
