Turkey BLT

Ingredients

4 slices of thick-cut sourdough

8 slices of turkey

4 rashers of bacon

Zest ½ lemon 

¼ cup whole egg mayonnaise

3 basil leaves, chopped

2 tbsp hommus

½ baby cos lettuce, leaves picked 

1 ripe tomato, sliced

Salt and pepper

Method

Place the bacon into a dry pan over a medium heat. Slowly bring up the heat, this will render the fat slowly so crispy bacon is achieved. Drain on paper towel.

Mix the mayonnaise with zest and basil.

To assemble sandwiches, spread hommus on one side of the bread and ensure it reaches the sides. Add lettuce, tomato, salt and pepper, turkey and bacon. Spread basil mayonnaise on the other side and sandwich together. Slice in half and serve.
