Sticky Pork Ribs

Ingredients
2-3 (about 1.5kg) rack of baby back ribs, sinew removed from the backbone
3 tbsp Dijon mustard
1 tbsp dried oregano
1 tbsp smoked paprika
2 tbsp brown sugar
Pinch salt and pepper
3-4 tbsp cup smokey BBQ sauce
Method
Preheat the oven to 160°C.
Lay the rack of pork on two sheets of baking paper. Spread over the mustard and then sprinkle over oregano, paprika, sugar and salt and pepper. Wrap tightly and then wrap in two sheets of foil and place on a tray. Roast in the oven for 2 hours.
Now turn the oven up to 220°C.
Open the package and peel back the foil and baking paper to expose the ribs. Brush with BBQ sauce and return to the oven uncovered for 15-20 minutes until caramelised.
