Tuna Steak with Mustard Sauce & Chips

Ingredients

2 x 200g fillets of tuna

Fries, to serve 

Olive oil

Salt, to taste

Chips, to serve 

Mustard Cream Sauce 

10g butter

3 French shallots, finely chopped 

1 tsp pink peppercorns, crushed 

1 sprig thyme, leaves picked and finely chopped

60ml dry vermouth 

300ml cooking cream

3 tbsp Dijon mustard

Method

Preheat a pan over high heat.

Oil and season the tuna steaks with salt. Fry for 1 minute on each side. Remove and rest on a plate.

For the sauce, add the butter, French shallots, thyme and peppercorns, cook until the shallots are caramelised. Deglaze with the vermouth. Now add the cooking cream and Dijon mustard. Reduce until thickened.

Slice the tuna. Serve with chips and mustard cream sauce.
