Tuna Patties with Cheats Hollandaise

Ingredients

475g tuna in spring water, drained (5 x 95g cans)

¼ cup panko breadcrumbs, plus 1 cup extra for coating

¼ cup freshly grated parmesan

1 small red onion, finely chopped

2 tbsp fresh dill, finely chopped

2 tbsp chives, finely chopped

½ garlic powder

½ tsp paprika

1-2 eggs, lightly whisked + 4 eggs, poached to serve

¾ cup mashed potato

Olive oil, for frying

80g baby spinach, to serve

Cheat’s Hollandaise

½ cup good quality store-bought mayonnaise

½ cup crème fraiche

Zest and juice of 1 lemon

1 tsp Dijon mustard

Pinch of salt

Method

In a large bowl, mix the tuna, ¼ cup of panko crumbs, parmesan, onion, dill, chives, garlic powder, paprika, eggs and mashed potato together until well combined. Divide mixture into 4 and shape into patties.

Place the remaining 1 cup of panko breadcrumbs in a shallow bowl and coat each patty evenly. Shake off excess crumbs and chill until ready to fry.

Gently whisk all the ingredients for the cheats hollandaise until smooth and well combined. Season to taste.

In a large frypan on medium heat, add enough oil to coat the base of the pan and fry the patties for 2 - 3 minutes on both sides or until the patties are golden brown. Drain on a paper towel.

To serve, top baby spinach with a tuna patty, poached egg, cheats hollandaise, a sprinkle of paprika and garnish with herbs.
