Gluten Free Prawn Focaccia

Ingredients

1 gluten-free focaccia, chilled

2 tbsp ricotta cheese

Pinch of mozzarella cheese

4 king prawns

Olive oil

Chilli flakes

Fried parsley

Method

Preheat the oven to 200°C.

Spread the ricotta on the base of the focaccia, then top with prawns and a drizzle of olive oil. Place the pizza directly on the oven rack for 4 - 5 minutes or until golden.

Finish with a sprinkling of chilli flakes and fried parsley.
