Tuna Club Sandwich

Ingredients
6 slices of square bread
200g canned tuna in spring water, drained
1 ball of buffalo mozzarella, thinly sliced
½ Romain lettuce, separated
1 tomato, sliced
4-5 tbsp mayonnaise
1 hard-boiled egg, finely chopped
1 spring of basil, finely chopped
1 French shallot, finely chopped
Zest 1 lemon
To serve
1 whole dill pickle, halved
Potato chips, to serve
Method
For the sauce, mix the tuna, hard-boiled egg, basil, shallots and lemon zest through the mayonnaise.
Toast the bread until golden brown. Spread the tuna mayonnaise onto one side of each slice.
For the first layer, add lettuce, tuna and tomato. Top with the second slice of toast, mayonnaise side up. Add more tuna, mozzarella, and lettuce.
Top with the third slice of bread, mayo-side down. Press down and secure the sandwich with 4 toothpicks.
Cut diagonally into quarters.
Serve with potato chips and pickles.
