Breakfast Burrito

Ingredients

4 large flour tortillas

1 tbsp olive oil 

1 tsp butter 

6 eggs

3 spring onions, sliced

4 par-cooked potatoes, cubed 

4 rashers of bacon, chopped 

30g cheddar, coarsely grated

Tabasco, to serve 

Salt and pepper

Method

Fry bacon in a large fry pan until fat has rendered and crisp, drain on paper towel.

In the same pan, fry the potatoes and sprig onions in the bacon fat until golden and cooked through. Remove and set aside with bacon.

Whisk eggs with a small pinch of salt. Pour the eggs in the pan and swirl around. Once it just starts to set bring in the sides with a plastic spatula and swirl again to set the uncooked eggs. Remove from pan.

Divide the eggs, potatoes and bacon between each tortilla. Sprinkle over the cheese and the wrap to form a burrito. Toast on both sides for a minute until golden. Serve with Tabasco.
