Steamed Coral Trout Fillets

Ingredients
2 x 180g skin on coral trout fillets
2 tbsp olive oil
1 tsp white pepper
4 cm piece ginger, julienned
2 cloves of garlic, finely chopped
3 spring onions, thinly shredded (white and green parts)
3 tbsp soy sauce
2 tsp honey
1 tsp sesame oil
1 tsp chilli condiment
Mixed greens, steamed to serve
White rice, steamed to serve
Method
Place fillets into a dish that fits into the steamer basket. Scatter over ginger, garlic, and half the spring onions. Place remaining spring onion shreds into iced water to curl them for garnish. Steam for 6 - 7 minutes until fish turns opaque and flakes to touch (time is determined depending on thickness of fillet). Place on a serving dish and set aside.
In a small bowl, mix the soy, honey, sesame oil and chilli.
Serve fish topped with remaining spring onion curls, mixed steamed greens of choice (boy choy, broccoli, sugar snaps), rice and chilli soy sauce drizzled over it all.
