Spiced Crispy Chickpeas

Ingredients

1 x 400g can chickpeas, drained and rinsed well

1 tbsp curry paste of your choice

1 tsp olive oil 

Pinch of salt

Method

Preheat the oven to 200°C.

Pat the chickpeas dry with paper towel. The drier they are, the crispier they’ll get!

Place in a bowl and add the curry paste, a pinch of salt and olive oil. Using your hands, toss everything together to ensure all of the chickpeas are coated.

Arrange them in a single layer on a baking tray lined with baking paper and roast in the for 25-30 minutes, shaking the tray every 10 minutes to ensure even crispiness.

Let them cool for a few minutes - they’ll get crispier as they cool.
