Apple Pancakes with Maple Syrup Butter

Ingredients
300g self-raising flour
1 tsp baking powder
¼ tsp bicarb soda
2 tsp maple sugar or caster sugar
1 egg
300ml buttermilk
Pinch of salt
Apple, sliced and steamed (optional)
Maple butter
250g unsalted butter, softened
¼ cup maple syrup plus extra to serve
1 vanilla pod, seeds scraped
Method
For the maple butter, beat butter until soft and pale. Add maple syrup and vanilla, then combine.
Sift the flour and baking powder into a large bowl. Add the sugar, salt, and bicab soda and mix through. Make a well in the centre and add the egg, then slowly fold in the buttermilk.
Heat a large pan over a medium to high heat and add a little oil and butter. Using 1/3 measuring cup (or a ladle), add batter to the pan to make heaped mounds. Don’t overcrowd the pan. Add sliced apple onto pancake. Cook for a minute or until little bubbles start to develop and pop on the surface. Flip and cook for a further minute or so.
Pile onto a plate, add a dollop of maple butter and drizzle over extra maple syrup.
