Slow Cooker Maple and Chipotle Beef

Cook Time 8 hours plus searing time

Serves 4

Ingredients

1 tbsp olive oil

1.2kg piece of chuck beef 

1 onion, finely sliced

3 garlic cloves, crushed

1 ½ chipotle chillies in adobo sauce, finely chopped (adjust to your taste)

2 tbsp tomato paste

2 tbsp maple syrup 

2 tbsp apple cider vinegar

1 tsp ground cumin

1 tsp oregano

1 tsp smoked paprika

½ tsp ground coriander

250ml beef stock

Salt and black pepper

To Serve

Burritos, tacos, or rice, to serve

Classic accompaniments of your choice, to serve

Method

Heat the olive oil in a pan over medium-high heat. Season the beef with salt and pepper and sear on all sides until well browned. 

Place the sliced onion and garlic in the base of the slow cooker. Set the browned beef on top.

In a bowl, mix together the chipotle chillies in adobo sauce, tomato paste, maple syrup, apple cider vinegar, cumin, oregano, smoked paprika, coriander and beef stock. Pour the mixture over the beef.

Cover with the lid and cook on low for 8 hours or on high for 4–5 hours, until the beef is very tender and pulls apart easily.

Remove the beef and shred it using two forks. Return the shredded beef to the slow cooker and toss it through the sauce. If the sauce is a little thin, reduce it in a pot until it thickens.

Serve piled into burritos or tacos, or over rice, with classic accompaniments like cheese, tomato, avocado, and sour cream.
