Banana Donuts

Serves 4

Ingredients

300g frozen banana, thawed  

½ cup caster sugar, plus an extra 3 tbsp for coating

1 tsp cinnamon

Pinch salt

1 cup self-raising flour

½ tsp baking powder

½ tsp bicarbonate soda

Oil for deep frying (peanut recommended)

Method

Mash the banana in a bowl with the sugar, ½ tsp cinnamon and salt until smooth. Alternatively, blitz in a food processor.

Sift over the flour, baking powder, and bicarbonate of soda, then stir until a sticky dough forms.

Cover and rest for 30–40 minutes.

Meanwhile, combine the sugar and remaining cinnamon in a bowl and set aside.

Heat oil to 180°C. Dip two spoons into the hot oil (this helps the dough release easily), then scoop up portions of the dough and carefully drop them into the oil.

Fry for 1–2 minutes, turning if needed, until puffed and golden.

Remove from the oil and place directly into the cinnamon sugar, tossing to coat evenly.

Serve warm.
