Sausages with Creamy Beans and Zucchini

Ingredients

2 tbsp extra virgin olive oil

6 good quality Italian-style pork sausages

2 cloves garlic, chopped

400g tin white cannellini bean, drain and liquid reserved 

50ml white wine 

1 medium zucchini, grated

1 tbsp sherry vinegar

1 tbsp sour cream

1 small handful each of parsley, dill, chives, finely picked and chopped

Method

Sear the sausages in a pan until caramelised but not cooked all the way through.

Heat oil in a large stew pot. add the zucchini and garlic, fry for a minute before deglazing with white wine. Add the white beans and some of the juice from the tin and season with salt and pepper. Add the vinegar. Place the lid on and cook for 2 - 3 minutes.

Now add the sausages in one single layer, and steam for a further 2 - 3 minutes. remove the sausages and sour cream and stir through. Serve sausages with the creamy zucchini stew and garnish with herbs.
