Baked Rice Pudding

Ingredients

Butter, greasing

½ cup short grain rice

2 eggs 

¼ cup caster sugar 

2½ cups milk

¾ cup thickened cream

3 tbsp sultanas 

Pinch of cinnamon 

Pinch of nutmeg

Method

Preheat the oven to 160°C and grease a 20 cm baking dish with butter. 

Bring a small pot of water to the boil. Add the rice and cook for 3 - 4 minutes to par cook. Drain.

Whisk together the eggs and sugar until thick and pale then add the milk and cream. Mix through the rice and sultanas and pour into the baking dish. Top with a sprinkle over cinnamon and nutmeg.

Place rice pudding dish into a bain marie, filled halfway with water. Bake for 45 - 50 minutes or until just set. 

Serve warm or cold.
