Sausage and Bocconcini Tartine

Ingredients

Extra virgin olive oil for drizzling

2 baguettes, cut in half horizontally and halved again

150g bocconcini balls, torn

Sausage Mixture

2 good quality Italian pork sausages, removed from their casings

100g beef mince

1 onion, finely diced

½ small capsicum, finely diced

1 egg

1 tsp smoked paprika

1 tbsp dry sherry (optional)

4 sprigs of parsley, chopped

Method

In a mixing bowl combine all the sausage mixture ingredients and mix well with your hands so it becomes sticky. Alternatively, blitz in a food processor.

Cover the 4 pieces of bread with torn bocconcini. Top with the meat mixture into 4 and press into the bread over the cheese, smoothing out the top. Drizzle with oil.

Heat a grill pan or BBQ over medium heat. Place the tartines in the pan, meat side down first and grill for 3-6 minutes checking to ensure they grill evenly. Turn and grill the bread side for a further few minutes and until the cheese is oozy.

Remove and cook for a few minutes before cutting in half and eating.
