Hong Kong Lemon Iced Tea

Ingredients

1 x oolong tea bag, or any tea of your choice, like English breakfast or Earl Grey 

3 tbsp coconut sugar, or any sugar of your choice

1 lemon, sliced

1 cup of sparkling water

½ bunch mint 

Method

Brew one pot of tea.

Pour into a decorative jug and while still hot add the sugar. Stir to dissolve sugar. Add the lemon slices and stir again before adding lots of ice, sparkling water and mint.

Serve over more ice for a refreshing summer drink.
