Rice Paper Salad Rolls with Broken Rice Filling

Ingredients
Filling
1 cup cooked jasmine rice, cooled
1 tbsp neutral cooking oil
200g pork mince
2 spring onions, chopped
1 tbsp fish sauce
1 tsp brown sugar
½ tsp black pepper
½ cucumber, julienned
1 carrot, julienned
1 cup shredded lettuce
Fresh herbs (mint, coriander)
Rice Paper
10 rice paper sheets
Warm water
Nuoc Cham
2 tbsp fish sauce
2 tbsp lime juice
1 tbsp sugar
1–2 tbsp water
1 chilli, finely chopped
1 clove garlic, finely chopped
Method
Heat oil in a pan over medium heat. Cook pork mince with spring onions, breaking it up.
Season with fish sauce, sugar and pepper. Cook until caramelised. Set aside to cool.
Combine all Nuoc Cham ingredients in a bowl and stir until sugar dissolves.
Dip a rice paper sheet into warm water until just soft.
Lay flat and layer lettuce, rice, pork, cucumber, carrot and herbs.
Fold in the sides and roll tightly. Repeat with remaining ingredients. Serve with dipping sauce.
