Pakora Tacos

Cook Time 45 minutes

Serves 4

Ingredients

9–12 pakoras

2 ripe avocados

½ clove garlic, minced

Juice and zest of 1 lime 

Pinch salt 

Pico de gallo salsa

1 ripe tomato, quartered and seeds removed, then finely diced 

½ white onion, finely chopped 

1 long red chilli, finely chopped

3 sprigs of coriander, stalks and leaves finely chopped 

Juice of 1 lime 

Sea salt, to taste

To Serve

4 tbsp plain yoghurt

4 Roti

Method

Cook the pakoras as per the packet instructions.

In a mortar and pestle, crush the garlic with a pinch of salt. Add the avocado, roughly mash, leaving some bits chunky. Mix in lime juice and zest. 

For the pico de gallo, combine all the ingredients together and season with salt.

Warm roti in a pan over a medium heat until crisp and golden.

Fills the tacos with avocado, pakoras, pico de gallo and a dollop of yoghurt.
