Refried Bean and Sour Cream Dip

Ingredients

400g refried beans

½ tsp ground coriander

½ tsp ground cumin

½ tsp smoked paprika 

300g sour cream

20g cheddar or Manchego cheese

Coriander, to garnish

Corn chips, to serve

Pico de Gallo

Juice and zest 1 lime

1 tomato, seeds removed and finely diced

½ green capsicum, finely diced

1 jalapeno, finely chopped

3 spring onions, finely chopped

Salt and pepper 

Method

Mix the refried beans with the spices. Season to taste.

Combine the pico de gallo ingredients.

On a medium serving plate, spread over the refried beans in an even layer. Add dollops of sour cream and spread over the beans to completely cover. Garnish with the pico de gallo. Garnish with the cheese and coriander.
