Miso Butter Linguini

Ingredients

200g linguini 

100g salted butter, diced

1½ tbsp white miso paste

100g freshly grated parmesan 

Furikake, to garnish

Method

Bring a large pot of salted water to the boil and add the pasta.

While the pasta is cooking, start the sauce, add the butter, miso and 1 cup of the starchy pasta water to a pan. Whisk over medium heat to break down miso, allowing it to dissolve into sauce.

Once the pasta is cooked until al dente, using tongs drain the pasta into the sauce. Add the Parmesan and vigorously toss everything together so the sauce looks creamy.

Serve pasta in bowls with extra parmesan and a sprinkle of furikake.
