Pipis in Black Bean Sauce

Ingredients
3 tbsp vegetables oil
500g pipis, purged
2 tbsp Shaoxing wine
3 tbsp AYAM Black Bean Sauce
2 tsp sugar
3 sprigs coriander
½ bunch spring onions
A simple and elegant seafood dish!
Method
Heat oil in a wok then add the pipis and wine. Put a lid on the wok and steam for 3 minutes or until the pipis just start to open. Now add the black bean sauce and sugar and toss the pipis through the sauce. Garnish with the coriander and spring onions.
