Peking Duck Pancakes

Ingredients

1 Peking duck kit

¼ cup oil (canola/avocado/peanut)

Classic

½ cucumber

1 spring onion

Apple & Pear

1 apple

1 pear

Slaw

¼ wombok cabbage

1 spring onion

3 tbsp kewpie mayo

Sesame seeds

Method

Heat duck breast in oven following kit instructions. Slice into small pieces.

Slice cucumber, spring onion, apple and pear into batons. Set aside.

For slaw, combine sliced wombok, spring onion, kewpie mayo and sesame seeds.

For crispy pancake option, heat oil in a deep pan. Microwave the pancakes for 40 seconds. Place pancakes in oil one-by-one. Cook for 30 seconds on each side until golden.

Assemble pancakes with desired toppings.
