Peanut Butter & Jam French Toast Rolls

Servings makes 8 rolls
Ingredients
8 slices soft white sandwich bread, crusts removed
125g peanut butter
125g strawberry jam
2 eggs, lightly whisked
1 tbsp honey
½ cup milk
Butter, for frying
3 tbsp caster sugar
1 tbsp cinnamon
Method
Using a rolling pin on a clean surface, roll out the crustless white bread until it is thin and flat (approx. 0.5 mm thick). Spread 1 tsp of peanut butter on half the bread and 1 tsp of jam on the other side. Carefully roll the bread up to create a spiralled log. Repeat with remaining slices of bread and set aside.
In a shallow bowl, whisk the eggs, milk and honey together. Dip one roll at a time in the egg mixture, coating the roll well and evenly.
In a fry pan, on medium heat, melt butter and fry each roll, in batches, for 2 - 3 minutes on all sides or until golden brown.
Combine caster sugar and cinnamon. Coat hot spiralled logs in the sugar and serve.
