One Pan Baked Gnocchi

Ingredients

500g gnocchi 

1 x 400g can crushed tomatoes or napolitana sauce

1 cup frozen baby peas

150g scamorza mozzarella, sliced

1 handful of freshly grated parmesan, plus extra for garnish

1 tbsp extra virgin olive oil

100g basil pesto

A few leaves of basil, to garnish 

Salt and pepper

Method

Preheat the oven to 180°C. 

Place gnocchi (no need to boil for this recipe), crushed tomatoes along with 200ml of water. Mix in the peas and season with salt and pepper. Dollop in the pesto in and around the gnocchi.

Arrange mozzarella and parmesan over the top and drizzle over a little extra oil. 

Bake in the oven for 25-30 minutes until golden brown and bubbling. 

Rest for 5-10 minutes before garnishing with basil and extra parmesan and serving.
