Muesli Caramel Slice

Servings makes 12 slices

Ingredients

1 egg

120g caster sugar

80g unsalted butter, melted

½ cup (80g) plain flour 

⅓ cup (60g) self-raising flour

Topping

200g brown sugar

175g unsalted butter

2 tbsp golden syrup

1 tbsp white miso paste

1 cup natural macadamia and cranberry muesli

Method

Preheat the oven to 160°C and line a 20 cm x 20 cm slice tray with baking paper.

In a large bowl, beat the egg and caster sugar until well combined. Add in the melted butter and mix to combine. Sift and combine the flours and gently fold into the butter mix. 

Pour into the lined tray and spread evenly. Bake for 20 minutes until lightly golden.

For the topping, place the brown sugar, butter and golden syrup in a saucepan and heat gently over a low heat for 5 minutes. When the butter melts and the sugar dissolves, simmer the mixture for 10 minutes on low heat. Add in the muesli and miso paste, stirring to combine. Pour the mixture over the biscuit base, spreading evenly. 

Bake in the oven for 8-10 minutes or until lightly golden brown. Allow to cool completely before cutting into 12 slices.
