Muesli Bars

Servings makes about 30 bars

Ingredients

1 cup walnuts 

2 cups untoasted muesli 

3 tbsp sesame seeds 

1 tsp vanilla bean paste

¾ cup honey 

½ cup maple syrup 

Method

Preheat the oven to 150°C.

Place all the walnuts and sesame seeds onto a tray and toast in the oven for 20-30 minutes.

In a medium pot bring the vanilla, honey and maple syrup to the boil. Boil for 2-3 minutes, watching it carefully to ensure it doesn’t boil over.

Remove nuts and seeds from the oven and place in a bowl with the muesli. Pour over hot syrup and stir with a metal spoon. Pour into a tray that has been lined with baking paper. Cover with another piece of baking paper and using a heavy weight or a glass, evenly spread out the nut mixture until it is nice and compact. Cool for 30 minutes before cutting into bars.
