Pork Chops with a Sweet & Spicy Twist

Ingredients
2 pork chops with the bone
1 tbsp brown sugar
1 tbsp garam masala
1 tsp chilli powder (optional, but gives a nice kick!)
2 tsp salt
A generous drizzle of olive oil
Pineapple Raita
1 cup Greek yoghurt
½ cup diced fresh or canned pineapple
½ tsp chilli powder
1 tsp toasted cumin seeds
1 tsp sugar
Good pinch salt
2 tbsp fresh coriander, finely sliced
Method
Start by mixing up your spices for the pork chops. In a bowl, toss in your brown sugar, garam masala, chilli powder (if you're using it), and salt. Give it a good mix until everything is well combined. This will be your magic dust that turns ordinary pork chops into a carnival of flavours!
Next, it's time to dress up your pork chops. Cover them with olive oil. This will not only make them sizzle in the air fryer but also help your spice mix to stick perfectly.
Now, rub that aromatic spice mix all over your chops. Make sure you cover every nook and cranny to ensure every bite is filled with taste.
Let's get them cooking! Pop your chops into your air fryer. Set it to 200°C and let them cook for 12 minutes. Don't forget to flip them halfway through. Once they're done, let them rest for a few minutes before you tuck in. They will be even more juicy and tender. Plus, it gives you time to pour the wine!
For the Pineapple raita, combine all ingredients and mix together. Let it sit for at least 30 mins before serving.
