Missar Wot - Spicy Red Lentils

Ingredients
2 medium-sized red onions, diced
5 cloves garlic
1-inch ginger
1 cup red lentils, washed 6-7 times
Berbere (Ethiopian spice mix), to taste
½ tsp black cardamom
½ tsp black pepper
Olive oil
Canned diced tomatoes
Salt, to taste
Injera, to serve
Method
Caramelise onion then add garlic and ginger. Cook for 1 minute.
Add the Berbere, black cardamom, black pepper and tomato, and cook for 3-5 minutes.
Add thoroughly washed red lentils and water (3 cm above lentils). Bring to boil then stir and simmer for 20 minutes or until the lentils are broken down. Add salt to taste. Cook longer for greater flavour.
Adjust consistency with more water if required. Serve with injera.
