Miso Parmesan Potatoes

Ingredients

1kg potatoes, skin on and cut into quarters

1 heaped tsp miso paste

15g butter, melted 

½ cup finely grated Parmesan

Method

Heat oven to 190°C.

In a large bowl whisk together the butter and miso paste. Add the potatoes and toss to evenly coat.

Sprinkle parmesan evenly on a flat tray lined with baking paper. Arrange potatoes, cut side down onto parmesan. Cover with foil and bake for 40-45 minutes. Remove foil and cook for a further 30 minutes or until golden and crispy. Rest for 5 minutes to get extra crispy before serving.
