Microwave Chocolate Fudge Pudding

Cook Time 5 minutes

Servings makes 2-3 portions depending on the dish used

Ingredients

45g butter 

60g milk 

60g 70% dark chocolate, plus 40g chopped

60g caster sugar (I prefer raw caster sugar) 

60g plain flour

30g quality cocoa powder

½ tsp baking powder

Salt 

2 eggs

Tonka bean (optional)

Topping 

55 brown sugar

12g quality cocoa powder (2 tsp) 

20g 70% dark chocolate, chopped

3tbsp boiling hot water

LINDOR of choice per serve (dark is my preference)

Method

In a saucepan, gently melt together the butter and 60g chocolate along with the milk. Set aside to cool.

In a bowl combine the dry ingredients. Whisk in the eggs and the cooled butter and chocolate mixture. Add the 40g chopped chocolate and Tonka if using.

Place into microwave-proof ramekins or serving dishes.

For the topping, combine the brown sugar, cocoa and chopped chocolate. Sprinkle an even layer on each pudding. Top with a touch of boiling hot water.

Microwave for 90 seconds to 2 minutes or until the pudding is cooked.

Carefully remove hot ramekin from the microwave and with a knife, open the centre slightly and place a LINDOR truffle inside.

Push together the cut again slightly. This will create a wonderful, rich, saucy centre.

Serve immediately with a scoop of vanilla ice cream on top.
