Gold Kiwifruit, Prawn & Avocado Salad

Ingredients
6 cooked prawns, peeled and deveined
2 gold kiwifruits, peeled and cut into bite-sized pieces
1 avocado, diced
1 large handful of mesclun lettuce
2 tbsp pepitas
1 tsp black sesame seeds
Dressing
1 tsp rice wine vinegar
2 tbsp light soy
1 tsp sesame oil
1 tsp sugar
Juice ½ lemon
Method
Whisk the dressing ingredients together until sugar has dissolved.
Combine the ingredients into a large bowl. Toss through with the dressing until coated.
