Teriyaki Roasted Pork Scotch Fillet

Ingredients

1 tsp extra virgin olive oil 

1.5kg pork scotch (neck), tied

1 onion, sliced 

1 green capsicum, sliced 

½ cup light soy

½ honey

¼ cup sake

¼ cup mirin

¼ tsp Chinese 5 Spice 

½ tsp cornflour, mixed with 2 tbs. of water

½ cup chicken stock

Steamed Asian greens, to serve 

Steamed rice, to serve 

Salt & pepper

Method

Preheat the oven to 180°C.

Drizzle oil over pork and season with salt and pepper. Place a roasting pan onto the stovetop and sear pork until golden all over. Add the onion and capsicum and fry for 1-2 minutes.

Combine the soy, honey, sake, mirin, Chinese 5 spice and 1 cup of water. Pour around the pork and cook for 1 - 1.5 hours.

Remove from the oven and rest pork on a board for 20 minutes. Place the pan back on the stovetop, and bring to a simmer. Add the stock and cornflour mixture and whisk it to thicken.

Slice the pork and serve with rice, steamed greens and a good drizzling of teriyaki sauce.
