Goat's Cheese & Chive Omelette

Ingredients

A few handfuls of lettuce of your choice

50g of goat’s cheese (or any cheese of your choice)

3 eggs

5g butter

3 tbsp chives, finely chopped

French Dressing

½ tsp Dijon mustard 

1 tsp vinegar of your choice

2 tbsp extra virgin olive oil 

Salt and pepper, to taste

Method

To make the dressing, whisk the mustard and vinegar together in a salad bowl, then whisk in the olive oil slowly. Season with salt and pepper. Place the lettuce in the salad bowl, then add the dressing. Don’t toss until ready to serve.

Crack the eggs into a bowl and whisk well. 

Melt the butter in a medium non-stick frying pan over medium heat. Tip the egg and swirl it around the pan. Use a wooden spoon to vigorously scramble the eggs. Once the egg just starts to set, stop stirring for a moment and arrange the cheese in the middle of the omelette, sprinkling with chives. Remove from the heat and fold the omelette over three times to resemble a Swiss roll. Tip onto a plate. 

Toss the salad and serve it alongside the omelette.
