Ingredients

3 medium South Australian garfish fillets, cut in halves

8 x South Australian medium prawn cutlets

250g South Australian squid, cleaned & sliced thinly

1 x medium zucchini, cut in 3rds & cut into thin batons

1 lemon, cut in halves

2 cups of potato starch

¼ cup flat-leaf parsley, chopped

Sea salt & pepper

2 tbsp aioli

Vegetable oil, to deep fry

Method

Bring a large pan, 2/3rds filled with oil to 180°C.

Place all seafood and zucchini into a bowl with potato starch. Coat all ingredients and shake off excess starch.

Fry seafood and zucchini in 2 batches for 2 to 3 minutes or until golden brown.

Once cooked, place the seafood and zucchini onto a tray with an absorbent towel. Season with salt and pepper.

Serve seafood and zucchini evenly over 2 plates. Garnish with parsley, lemon and aioli.
