Colin's Curried Sausages
Ingredients
6 sausages
1 onion sliced
1 x 2 cm knob ginger, minced
2 cloves garlic, finely chopped
1 tbsp extra virgin olive oil
1 tbsp curry powder
1 can coconut milk
500g sweet potato, cut into 2cm cubes
¼ small cabbage, roughly chopped
Coriander, to serve
Cooked rice, to serve
Colin's Curried Sausages
Method
Poach sausages in a pan of simmering water for 3-4 minutes until sealed. Remove sausages and chop them into medium-sized chunks.
In a separate pan, saute the onion, ginger and garlic in oil until softened. Add curry powder and cook off. Stir through the coconut milk and add 100ml of water. Add the vegetables and cook for 3-4 minutes before adding the sausages. Place the lid on and cook for a further 8-10 minutes or until the vegetables and sausages are cooked.
Garnish with coriander and serve with rice.
