Chicken and Broccoli Noodles

Ingredients
2 tbsp peanut oil
500g chicken thighs, diced
1 onion, finely sliced
3 garlic cloves, chopped
1 x 2cm piece of ginger, julienned
1 head of broccoli, cut into florets
2 packets of dried ramen noodles (flavouring discarded)
1 cup boiling water
1 tsp cornflour mixed with 3 tbsp of water
Sauce
2 tbsp dark soy
1 tbsp light soy
2 tbsp oyster sauce
1 tbsp white vinegar
1 tbsp sugar
To Serve
Crispy chilli oil, to serve
Method
For the sauce, whisk all the ingredients in a jug.
Heat 1 tbsp of oil in a wok over high heat. Add the chicken in batches to brown. Place on a plate. Add the remaining oil to the wok and fry the onion, garlic, and ginger for 1 minute. Add the broccoli and toss, then return the chicken and any juices that have gathered on the plate.
Add the dried noodles and boiling water. Pour in the sauce. Cover and let the noodles steam in the sauce for 1 minute. Remove the lid and toss everything together along with the cornflour mixture.
Serve as is or with a drizzle of crispy chilli oil.
