Cheesy Zucchini Scones

Cook Time 45 minutes

Servings  makes 12 scones

Ingredients

2 cups self-raising flour 

1 cup grated zucchini – squeeze to remove excess liquid 

2 tbsp chives, finely chopped  

½ cup flat leaf parsley, finely diced 

1 cup tasty or cheddar cheese, grated 

1 cup buttermilk 

1 egg, beaten (optional) 

Pinch salt

Butter, to serve

Method

Preheat oven to 180°C and line baking tray.

Place flour in a bowl with zucchini, chives, parsley, cheese, salt and buttermilk. Use a butter knife or spatula to bring the dough together gently, then turn out onto a lightly floured surface and very gently knead to bring together, press dough out and use a scone cutter to cut into rounds.

Place on a baking tray closely together, brush with egg wash or buttermilk and bake for 30 minutes or until golden and cooked through. Remove and serve warm with real butter!
