Bull’s Eyes Eggs

Ingredients
2 egg
1 brown onion, sliced
1 long red chill, finely chopped
Vegetable oil
Light soy
Black sesame oil
Jasmine rice, to serve
Toasted sesame seeds, to garnish
Method
In a small pan caramelise the onion and chilli in vegetable oil.
Add a good glug of vegetable oil to a hot pan, fry the egg to your liking.
Serve the rice, and caramelised onions and chilli, top with the fried egg. Season with light soy and black sesame oil. Garnish with toasted sesame seeds.
