Broccoli Tots

Cook Time 30 minutes

Servings 4

Ingredients

1 tsp of extra virgin olive oil 

2 slices sourdough, crust removed and torn into chunks

½ cup milk

1 small head of broccoli, cut into small florets

1 small handful of parmesan, finely grated 

100g mozzarella, grated

1 egg

¼ fine breadcrumbs 

Salt and pepper 

Tomato sauce or sweet chilli, to serve

Method

Pour milk over sourdough and let stand for 30 minutes or until very soft.

In the meantime, place broccoli into a bowl and drizzle over oil and a pinch of salt. Place into the basket of an air fryer and cook for 20 minutes until tender. Remove and return to the bowl. Cover with cling film and leave to cool then finely chop.

Combine the broccoli with the cheeses and egg. Squeeze excess milk from the bread and combine well with the broccoli mixture. Using a teaspoon measure make small balls of mixture and then coat in bread crumbs. 

Place into the air fryer, lightly spray with olive oil and cook for 15 minutes until golden.
